Cinnamon Muffins

Ingredients:

1 1/2 cups flour
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup milk
1/4 cup packed brown sugar
2 teaspoons baking powder
1 egg, beaten
1/2 cup oil

Topping:

2 tbsp brown sugar
2 tsp flour
1 tbsp cinnamon
1 tbsp melted butter

Method:

Mix all muffin ingredients together and fill muffin tins 3/4 full. Mix topping ingredients in separate bowl and sprinkle on muffins. Bake at 400 degrees for 40* (see note below) minutes.

My notes: This is a combination of two recipes and I have never made it before -- they are in the oven as I type so I will post back after we have tried them! I ended up cooking them for only about 20 minutes, then they were done!

Honey Baked Lentils

I was over at Enchanted Dandelions and this very yummy recipe was posted, I am going to give it a try.

Ingredients:

1 cup lentils
2 cups water
2 tbsp honey
2 tbsp soy sauce
2 tbsp olive oil
1/2 tsp ginger
1 small onion, chopped
1 clove garlic, minced
salt & pepper to taste

Method:

Combine the above in a baking dish, cover and bake at 350* until tender (~ 1.5 hours).

My Notes:

Just too easy to mess up, right? Wrong! Well as I was flinging around and apparently not paying attention I grabbed the bag of split peas instead of lentils. I did not realize this until everything had been cooking for awhile. It was still yummy but I am very interested to see how it tastes made right! I will try again soon!!!

Reese's Peanut Butter Cheese Cake

Ingredients:


1 1/4 cups graham cracker crumbs

1/3 cup plus 1/4 cup sugar; divided

1/3 cup Hershey's cocoa

1/3 cup butter or margarine, melted

3 packages (8 ounces each) cream cheese, softened

1 can (14 ounces) sweetened condensed milk (not evaporated milk)

1 2/3 cups (10 ounce package) Reese's Peanut Butter Chips, melted

4 eggs

2 teaspoons vanilla extract

Method:


1. Heat over to 300o F. Combine graham cracker crumbs, 1/3 cup sugar, cocoa, and butter; press onto bottom of 9-inch springform pan.


2. Beat cream cheese and remaining 1/4 cup sugar until fluffy. Gradually beat in sweetened condensed milk, then melted chips, until smooth. Add eggs and vanilla; beat well. Pour into prepared crust


3. Bake 60 - 70 minutes or until center is almost set. Remove from oven. With knife, loosen cake from side of pan. Cool. Remove side of pan. Refrigerate until cold. Garnish with Chocolate Drizzle, whipped topping, Mini Kisses as desired. Store, covered, in refrigerator.
